I do the same. My friends are always amazed that I just get in there and whip things together. I have a friend who uses recipes and still gets it terribly wrong. Some people can just COOK while others struggle to boil water.
OMG-- Let me share this one with you. We were over at my friend's house and he made fancy mashed potatoes. They were very salty. I mean it was like ';WOW'; salty. His girlfriend asked if they were supposed to taste like that because it was a new recipe he had found and wanted to try it. His response was ';Yes, sweetie! It's French!'; LOL Now everytime something goes wrong, we ask if it is French.
P.S. I know French cooking can be rich, but this guy is out of his mind... lol

No. My father in law doesn't use a recipe when he cooks...and we end up with 'cookie pie' complete with coconut, choc chips, oatmeal, maybe nuts...and its like a pound per small piece (its so dense). It may turn out in the end, but its not amazing.

No, you are not a genius, and yes, some people can't do this. Some follow recipes very closely, some refer to them but improvise around them, while others don't use recipes at all.
I always thought recipes were a good starting point to give me ideas, then I just go wherever I go with whatever I have on hand, and with whatever technique I want to use. Occasionally the result just doesn't work, but that is a rather rare occurrence. Can't be afraid to fail or will never discover something good.

Maybe not on the same plane as an Einstein or von Braun. It does take some talent to throw stuffs together and come out with a palatable dish that teases the senses and makes for a happy tummy. I dunno, but think that your experience in the past helps, and your knowlege of basic principles of cooking and food science. When I cook, I rarely use a recipe but when I bake that is a science and usually require a recipe if it is not something that is made often enough to remember.

I do that all of the time, so no two meals are exactly the same. I will start with something basic and then grab what ever is at hand, making it up as I go.
I have some chipolatas in the fridge defrosting and I am thinking of them in a curry for dinner.
Dinner is in 10 1/5 hours, so there is plenty of time for me to change my mind.
It all depends on how the food tastes! If it's disgusting then no, your not a genius, just a bad chef in denial!

Besides recipes are not scientific formulas. If you use a dry herb there are many different tastes. A little dried tarragon can go a long ways but some you can harder taste at all.

You know what? The best way to make people with esophageal cancer feel better and at the same time have enough energy to have their therapy done properly is to put them under enteral nutrition until they finished their treatment and have recovered their initial weight (before being sick)!

example: for a man of 70kg (154 lb witch is quite light for a man) you must give to him 700g (1.54 lb) of beef meat or 16 eggs or 22 yogurts per day every day!!!!
Forget about your soup unless it's only for pleasure (but it'll full the stomach and make him feel like ';I don't want to eat nothing more!';)

TILAPIA WITH CHEESE SAUCE
8 Tilapia Filets
1/2 cup real mayonnaise
1/2 cup Velveeta Cheese, coarsely shredded
1 teaspoon crumbled blue cheese
1 cup potato chips, crushed
olive oil or vegetable spray
sea salt and black pepper
garlic powder, for sprinkling
paprika (optional)
Prehear oven to 400F.
Spray a small baking sheet with olive oil or vegetable non-stick spray (or line pan with parchment paper or aluminum foil before coating with a fine mist of oil for easy clean-up).
Place fish filets on pan. Sprinkle lightly with sea salt, ground black pepper, and a light dusting of garlic powder.
In a small bowl, combine mayonnaise with Velveeta and blue cheese. Spread mixture over fish. Sprinkle with potato chips and paprika.
Bake for 8-15 minutes, or until fish is no longer translucent and is flaky white.
RANCH TILAPIA
1 5 oz. tilapia fillet
1/2 cup Ranch dressing
1 cup Parmesan cheese
2 cups corn flakes
1 pinch salt
1 pinch black pepper
Preheat oven at 350 degrees.
Grind up corn flakes into crumbs. Mix Parmesan cheese, salt, pepper in with the corn flake crumbs. Baste the tilapia fillet (both sides) with Ranch dressing. Coat fish with the crumb mix evenly.
Bake for 17 mins.
BUTTERY-CRUSTED BAKED TILAPIA
4 6-oz boneless tilapia filets
6-8 Ritz crackers, crushed
1/2 teaspoon seasoned salt
1/4 teaspoon chili powder
1/4 teaspoon adobo seasoning
2 tablespoons unsalted butter, cold
Arrange fish on a lined baking sheet. In a mixing bowl, combine crushed Ritz crackers with seasoned salt, chili powder, and adobo seasoning (use clean hands to mix).
Cut butter into 6 equal pats. Place one pat a piece directly on the center of the tilapia. Cut remaining 2 pats into pea-sized pieces and mix by hand into cracker mixture. Sprinkle crumbs equally over each tilapia filet.

Fish is one of those funny ingredients. Regardless of the type of fish you cook, the main thing to remember is; Less Is Better. By that I mean the less you do to it, the better it will taste. Use milder seasonings and don't overpower the flavor of your fish.
Try this for the tilapia:
white wine, just enough to cover the bottom of your skillet
butter - 1 tablespoon
salt- to taste
pepper - to taste
garlic - 1/4 teaspoon
Melt butter in skillet. season fish with salt and pepper. Place in skillet with butter over medium heat. Carefully turn after 2 minutes. Pour wine over fish and add garlic. Place skillet with fish in 350* oven for 5 to 10 minutes, until done. Remove fish to serving platter. Pour wine from skillet over fish.
Fish is also easy to over-cook and under-cook. Fish is done when flaky. Good luck.

1/2 cup margarine
Tilapia
Layer frozen fish fillets in greased casserole dish (9x9), overlapping if needed.
Spread cream of shrimp soup over fish.
(Do not add water).
Melt margarine and mix with crushed crackers.
Sprinkle cracker mixture over casserole.
Bake uncovered at 350° for about 45 minutes.
Note: Sometimes I sprinkle old bay seasoning on the cream of shrimp soup before adding the crackers.
Also I add a dash or two of hot sauce to the melted butter before adding to the cracker crumbs.

* 1/2 teaspoon celery salt
* 1/2 teaspoon garlic salt
* 4 (8 ounce) fillets catfish
* 1/3 cup butter or margarine, melted
DIRECTIONS
1. In a shallow dish, combine the first four ingredients. Pat fillets dry; dip in butter, then coat with crumb mixture.
2. Coat grill rack with nonstick cooking spray before starting grill. Grill fillets, covered, over medium-hot heat for 10 minutes or until fish flakes easily with a fork, carefully turning once.
I have many great fish recipes, but I'll narrow it down to two of my favorites that will do well with mild fish.
INDONESIAN-STYLE GRILLED FISH
6 oz. (1/2 can) beer
1/2 cup sweet %26amp; sour sauce
1/2 cup soy sauce
3 Tbl. sugar
1-1/2 Tbl. oil
2 tsp. minced garlic
1 tsp. ground ginger
3 green onions, sliced
2 lbs. fish fillets
Blend all ingredients except onions %26amp; fish. Place fish in shallow baking dish; pour marinade over. Cover and refrigerate at least one hour. Remove fish and place on sheet of heavy-duty foil cut 2 inches larger than fish all around; bend edges up to make lip around fish. Sprinkle with onions and place on hot grill, but not directly over coals. Pour marinade over fish, cover grill, open vents. Grill 20-30 minutes, until fish is opaque and flakes easily with fork.
EASY FISH %26amp; BROCCOLI SKILLET
1 10-oz. pkg. frozen chopped broccoli
1 standard can cream of mushroom soup
1/4 cup white wine
1 tsp. lemon juice
1 pound mild fish fillets
2 Tbl. chopped pimientos
1/2 tsp. salt
Dash pepper
Rinse frozen broccoli to separate; drain. Mix soup, wine and lemon juice in 10-inch skillet. Heat to boiling, stirring constantly. Add fish, broccoli, pimientos, salt %26amp; pepper. Cover and simmer until fish flakes easily with fork, about 15 minutes. Serve over chow mein noodles, if desired.

Make a foil packet and put the fish in with some garlic, onions, butter and put in a 350 degree oven for 20 minutes, it will be great!
For Mahi Mahi, all you need is sliced Lemon, Black Pepper freshly cracked, and a knob of BUTTER not marg. place in foil parcel in oven depending on fan forced or not about 200 for 25-30mins.. BEAUTIFUL........................

1. In a shallow dish, combine the first four ingredients. Pat fillets dry; dip in butter, then coat with crumb mixture.
2. Coat grill rack with nonstick cooking spray before starting grill. Grill fillets, covered, over medium-hot heat for 10 minutes or until fish flakes easily with a fork, carefully turning once.
I have many great fish recipes, but I'll narrow it down to two of my favorites that will do well with mild fish.
INDONESIAN-STYLE GRILLED FISH
6 oz. (1/2 can) beer
1/2 cup sweet %26amp; sour sauce
1/2 cup soy sauce
3 Tbl. sugar
1-1/2 Tbl. oil
2 tsp. minced garlic
1 tsp. ground ginger
3 green onions, sliced
2 lbs. fish fillets
Blend all ingredients except onions %26amp; fish. Place fish in shallow baking dish; pour marinade over. Cover and refrigerate at least one hour. Remove fish and place on sheet of heavy-duty foil cut 2 inches larger than fish all around; bend edges up to make lip around fish. Sprinkle with onions and place on hot grill, but not directly over coals. Pour marinade over fish, cover grill, open vents. Grill 20-30 minutes, until fish is opaque and flakes easily with fork.
EASY FISH %26amp; BROCCOLI SKILLET
1 10-oz. pkg. frozen chopped broccoli
1 standard can cream of mushroom soup
1/4 cup white wine
1 tsp. lemon juice
1 pound mild fish fillets
2 Tbl. chopped pimientos
1/2 tsp. salt
Dash pepper
Rinse frozen broccoli to separate; drain. Mix soup, wine and lemon juice in 10-inch skillet. Heat to boiling, stirring constantly. Add fish, broccoli, pimientos, salt %26amp; pepper. Cover and simmer until fish flakes easily with fork, about 15 minutes. Serve over chow mein noodles, if desired.

Make a foil packet and put the fish in with some garlic, onions, butter and put in a 350 degree oven for 20 minutes, it will be great!
For Mahi Mahi, all you need is sliced Lemon, Black Pepper freshly cracked, and a knob of BUTTER not marg. place in foil parcel in oven depending on fan forced or not about 200 for 25-30mins.. BEAUTIFUL........................

I've unlocked all the recipes on my DS cooking mama, with only
a few to become gold or in whihc are silver and one bronze in the impossible octopus dumplings...now when i start the game gold utensils appear on the start screen. Also i have observed when choosing a recipe at the end, there are a range of fruit/vergetables. What are these meant to represent?
hope someone can help me

Tips and/or recipes for cooking with convection microwave?
We are getting a GE Profile over the range convection microwave for our new kitchen instead of a regular range. I have never used a convection microwave so any tips or recipes would be appreciated. I will be using it mostly for baking (brownies, cookies, cakes, etc), roasting (chicken), warming, and browning/toasting. Any information is greatly appreciated!Tips and/or recipes for cooking with convection microwave?
Here are some tips:
In most cases when convection baking the temperature should be reduced by 50 degrees and then bake as you normally would.
The exception to the above is when the baking time is 13 minutes or less. The temperature can remain the same as a regular oven. In the case of cookies I find they are done one minute earlier or at least on the low side of the suggested baking time. The great thing about convection cooking is that the shelves can be close together and I get even cooking. I bake three shelves of cookies at one time. One on the turntable, and then one on each of the two wire racks which stack.
For much of my convection baking I use those disposable aluminum pans. I especially love the pizza pans. They fit perfectly. For cakes, Instead of using a 13 x 9 x 2 pan, I use two square pans or three loaf pans. Since they can all be baked at once it doesn't really matter.
For great baked potatoes that only take a little while to bake, I microwave two potatoes (or more if we have company) for 3-4 minutes. Then I butter the outside of the potatoes and place them on a piece of aluminum foil. Sprinkle salt on the potatoes and place the foil and potatoes on the turntable. Set the convection oven at 325 degrees and bake for 15 minutes. It is like they were baked in an oven for one hour.
Do not use aluminum foil or metal pans when micro waving, but when convection cooking all types of baking pans are okay.
Use caution when micro waving immediately after baking in the oven. The rack, turntable and walls will be very hot and may melt some microwave dishes. I sometimes bake a roast then want to warm up some leftover vegetables using the same oven at the microwave setting. For this I use ovenware or I have placed the microwave dishes on a dishtowel or pot holder on the turntable.
Don't be afraid to try the probe for roasts. It cooks them to perfection. What a treat.
When reheating foods try the reheat button. It uses a sensor to detect when foods are hot. It works like a charm most of the time and doesn't over heat foods.

I'm a college student, and live by myself. I'm a good cook, but it's just so hard to cook portions for one. I hate to waste food so I end up rarely cooking anything. I want to be healthy and eating out and fast food just isn't the way to do it. So I want to start cooking for myself again. Does anyone know any recipes that are good for one person, doesn't have to be too quick and easy. Thanks!Good recipes when cooking for one?
When I lived alone and shopped on a budget right after college, the freezer used to be my best friend! I would buy the smallest portions of meats and put one portion in the refrigerator and freeze the rest seperately in freezer bags. It's great to have hamburgers because you can form them before you put them in the freezer. Then you just thaw them and it's ready to go. I also used to cut recipes in half or in fourth (this works great with almost any pasta dish) Another thing I did was to find recipes that only made two portions and take the second portion for lunch at work. 2 large organic eggs
sea salt and freshly ground black pepper
1 fresh red chill, deseeded and very finely chopped
6 rashers of good quality smoked bacon
olive oil
4 round crumpets
Brown sauce or maple syrup, to serve
This is for two, but you can see how easy it would be to alter for one.
The below site is recipes for two but you will soon alter them to suit
When I lived alone, the secret was to make left-overs.
Start with a batch of spaghetti sauce, right out of the can.
Add onions, garlic, mushrooms, peppers, whatever you like.
Serve it over pasta with cut up sausage the first night.
Turn it into meat sauce %26amp; make a small lasagna to keep.
Bake a pork-chop, chicken leg, or spare-ribs in it BBQ style.
Turn it into chili with a can of kidney beans %26amp; spices.
Serve the chili over rice, with mixed veggies stirred in.
Get those bags of mixed salad greens %26amp; add veggies.
That is next to impossible
I have been trying for 25+ years
I toss it,,, now that MY dog is gone..
Get a roommate... NO get 3..
