Something easy that looks and tastes ALOT harder than it is pasta! I would suggest the following if the ingredients are something you would enjoy:
Linguini with mushrooms, grape tomatoes and fresh smoked mozzarella cheese
1 lb linguini cooked to al dente
two 10 oz packages of white button mushrooms
2 cloves of garlic, minced
1/4 cup white wine
1/2 cup olive oil
1 pint grape tomatoes, washed
1 ball of fresh smoked mozzarella cheese, cut into small cubes
1 Tbsp dried basil
1/2 tsp nutmeg
salt and pepper to taste
Heat a large sautee pan over med-high heat and add 3 tbsp olive oil.
Remove stems from mushrooms and then slice them. Add the sliced mushrooms to the hot pan and then salt them. Allow the mushrooms to cook, stirring occasionally until all their liquid is gone.
At this point add the garlic and cook for an additional minute or two (do not allow the garlic to get dark)
Remove the pan from the heat and add the white wine to deglaze the pan.
Add the nutmeg and some fresh cracked black pepper. Allow to continue cooking until the wine has been absorbed by the mushrooms. When all the liquid is gone add the remaining olive oil and the basil.
When the olive oil starts to crackle, lower the heat to med-low and add the tomatoes. Place a lid over the pan and cook for another few minutes (until the tomatoes are hot and just about to pop). At this point remove the lid and add the cooked linguini. Toss the pasta in the sauce and then add the cheese. Toss again and return the lid to the pan until the cheese starts to melt.
Serve with romano cheese on top.
Don't forget dessert! Make chocolate ganache and whipped cream and then have romantic things to dip in it like strawberries, pineapple and small cubes of pound cake. Then feed it to her and she will melt in your arms.
Amazing Chocolate Ganache Recipe
8oz heavy whipping cream
8oz bittersweet chocolate chips
1 Tbsp unsalted butter
1oz dark rum or grand marnier
Bring the cream to a boil in a saucepan. When it is just come to a rolling boil remove from the heat and add the chocolate chips. Allow to sit for about a minute to allow the chocolate to melt and then whisk until smooth. Add the 1tbsp of butter and whisk until smooth and glossy. When the ganache has cooled slightly add the 1oz of liquor and then whisk until just combined. Serve at room temperature.
