Pork Carnitas Yum

1,5 kg pork

2 tbsp neutral cooking oil

1 tbsp salt

1 tbsp black pepper

1 tbsp paprika

1 tbsp cumin

1 tsp cayenne pepper

1 tsp brown sugar

1 tsp oregano

1 clove of garlic

200 ml coca cola

150 ml milk

Remove any visible fat or stringy bits from the pork, and cut it into a few smaller pieces. Heat the oven to 125掳C. Mix the spices and the sugar on a plate, and roll the meat in this until well covered on all sides.

Heat the oil in a large pot, and fry the meat until browned on all sides. Cover with a lid and put in the oven, for about an hour. Then add the garlic, the milk and the coca cola, and let simmer for another hour. The meat should be extremely tender and easy to shred.

Remove the meat, and shred it. Put the pot back on the stove, heat the liquids and fry the meat shreds until all the liquid has evaporated and the meat is slightly crispy.

Serve with tortillas, chopped red onion, fresh coriander and lime wedges. Good tacos or burritos. What are some recipes for cooking pork butt roast?

scrub them good and throw them in the bottom of the crock pot , small amount of water, sprinkle with sea salt , i like o throw in a bullion cube beef and then lay your beef roast right over the potatoes season the roast to taste, throw in a chunked onion and some chunked carrots, maybe some green peppers chopped, put the lid on and set to high put on earlier the better so it will be ready for dinner

there you have a complete meal in one pot the bake potatoes and veggies with roast.
Pork Loin Roast With Cranberry Apple Glaze

INGREDIENTS:

1 boneless pork loin roast, about 3 1/2 to 4 pounds

salt and pepper or seasoning blend

1 clove garlic, finely minced or pressed

1 bag (12 ounces) cranberries

3/4 cup maple syrup

2 tablespoons brown sugar

2 cups finely chopped apples

zest and juice of 1/2 lemon

dash ground ginger

dash ground cinnamon

PREPARATION:

Trim excess fat from the pork roast. Sprinkle pork roast with salt and pepper or seasoning blend, then rub on all sides with garlic. Roast at 350掳 for 80 to 90 minutes, or to about 150掳F. on a thermometer. Meanwhile, in a saucepan, combine remaining ingredients; boil for 15 to 20 minutes, until fruit is very tender. Process half of the glaze until smooth. Spoon pureed mixture over the roast. Cook 30 minutes longer. Place roast on platter, slice, and spoon remaining cranberry-apple mixture around it.

****ENJOY!!!
I'm doing one in my crockpot now - I season it with a mix of brown sugar (just a tablespoon), and tsp each of thyme, oregano, salt and pepper. Brown in a hot skillet on both sides of the roast, add to crock pot, fill to halfway with vegetable stock (or chicken if its all you have, or water). Add some chopped garlic and sliced onions and simmer on low for about 8 hours - it is amazing! It falls apart - you can take it and serve as is with some taters and a veggie, or pull the pork, add barbecue sauce and have pulled pork sandwiches!
