Southern US cooking??? Recipes please?

I am from NY but i absolutely love Southern food. Has anyone got any recipes that they'd like to share with me? I know i can find recipes on the internet but family recipes are usually the best.

Here is a great Southern Menu:





Fried Green Tomatoes


3 medium, firm green tomatoes


1/2 cup all-purpose flour


1/4 cup milk


2 beaten eggs


2/3 cup fine dry bread crumbs or cornmeal


1/4 cup olive oil


1/2 teaspoon salt


1/4 teaspoon pepper





1 Cut unpeeled tomatoes into 1/2 inch slices. Sprinkle slices with salt and pepper. Let tomato slices stand for 15 minutes. Meanwhile, place flour, milk, eggs, and bread crumbs in separate shallow dishes.





2 Heat 2 Tbsp of olive oil in a skillet on medium heat. Dip tomato slices in milk, then flour, then eggs, then bread crumbs. In the skillet, fry half of the coated tomato slices at a time, for 4-6 minutes on each side or until brown. As you cook the rest of the tomatoes, add olive oil as needed. Season to taste with salt and pepper.





Grillades(gree-YHADS)





1 pound pork steaks, cut into 1-inch pieces


1 tablespoon Creole Seasoning


1/2 cup vinegar


Cooking spray


2 tablespoons chopped onion





Season pork with Creole seasoning and place in shallow baking dish. Marinate overnight in vinegar.





Place drained meat into a skillet coated with cooking spray.





Brown on each side. Add onion and enough water to cover. Reduce heat and simmer for 1 hour.





Serve over creamy grits.





Serves 4.





Creamy Grits


2 tablespoons salted butter or 2 tablespoons unsalted plus 录 teaspoon salt


2 cups water


陆 cup whole-grain grits


1 to 2 cups half-and-half





Drop the butter into the water in a heavy-bottomed saucepan and bring to a boil. Stir in the grits, return to a boil, and reduce the heat, allowing the grits to cook at a low boil for 10 minutes or so, until the grits are very thick and have absorbed most of the water, stirring occasionally to prevent the grits from sticking.


Add about 陆 cup of the milk or cream to the pot and turn down the heat, allowing the grits to simmer for another 10 minutes or so. As the liquid evaporates or is absorbed, add more cream or milk, cooking the grits until the desired consistency is reached, a total cooking time of at least an hour.


Serves 4.





Real Sweet Tea


3 family sized tea bags


a pinch baking soda (about 1/4 teaspoon)


1 to 1 1/3 cups of sugar


Bring 3-4 cups of water to a boil. Add a pinch of baking soda to the water and add 3 family sized tea bags. Remove from heat and cover. Allow to sit for at least 10-15 minutes. Pour into gallon pitcher and add sugar. Then fill with cold water. Refrigerate.


Ingredients





Peach Cobbler


1 stick - butter (melted)


2 quart - microwave dish


1 cup - self-rising flour


1 cup - sugar


1 cup - whole milk


4 cups - sliced peaches


Vanilla Ice Cream





Melt 1 stick of butter in a 2 quart microwave dish. In a separate dish, combine 1 cup of self-rising flour and 1 cup of sugar and 1 cup of whole milk. Mix these 3 ingredients thoroughly. Add to the melted butter. Add 4 cups of sliced peaches (sweetened to taste) and DO NOT STIR. Bake at 375 degrees for 40 minutes or until browning is noted.





This is excellent served while warm. For extra flavor, top with vanilla ice cream.





NOTE: Canned or frozen peaches may be substituted for fresh. If plain flour is used, add 2 teaspoons of baking powder.

Cube Steak with Onion Gravy:


1 lb. cube steak


1 cup flour


Salt, pepper, garlic powder


2 cans beef broth


1 onion, chopped


1 envelope onion soup mix


1 tbsp. worchestershire sauce


Salt, pepper, 1/2 tsp. thyme





Place flour in a shallow dish and season with salt, pepper, and garlic powder. Coat cube steak with flour well and place in a hot skillet with vegetable oil. Brown cube steaks well on both sides and remove from skillet-- you're not cooking them all the way through now. With drippings/oil from the pan add in enough flour to make a roux, usually 2-3 tbsp. Brown the flour/oil/roux mixture until it turns a deep golden brown over medium low heat, usually takes 10 minutes. Whisk in enough beef broth for a gravy-- this you have to use your judgment on. Keep whisking to remove all lumps. Now add in all seasonings such as salt, pepper, thyme. onion soup mix, worchestershire sauce, and chopped onion and stir to combine. Add in browned cube steak and turn heat to low and simmer covered for one and a half hours. You may need to add more broth during cooking time. Serve over hot buttered rice and enjoy!





Here's my recipe for Macaroni and Cheese- southern style that's baked. Boil one 8 oz box of elbow noodles until done and drain. Meanwhile, mix together one 12 oz can evaporated milk, 1 cup sour cream, salt/pepper/cayenne to taste, 1 egg, and 8-16 oz cheddar cheese. You can add as much cheese as you want but hold out some of it for the top of the mac and cheese. Mix that together and add in your cooked elbow macaroni. Pour into a greased casserole dish, top with remaining cheese, and bake at 350 degrees for 30 mintues. Check the mac and cheese to see if it's done. If it still looks like it has liquid left you can cook it for longer or take it out if you like creamy mac and cheese.





Banana Pudding is a southern staple at all potlucks and family reunions. Here's the recipe I use and everyone loves it.


Banana Pudding:


1 can sweetened condensed milk


1 1/2 cups cold water


1 pkg. 4 serving size vanilla pudding


1 pint heavy whipping cream


3 bananas, sliced


1 box vanilla wafers





Whisk the sweetened condensed milk and water together. Add in the pudding mix, stir and chill in fridge. Meanwhile in a chilled bowl, beat the whipping cream with hand mixer until stiff peaks form. Fold the whipped cream together with the pudding/milk mixture. Layer pudding/cream mixture on bottom of another bowl with layers of bananas and wafers until you have used all the pudding mixture, bananas, and wafers. Chill and serve.
O.K. These two are going to sound gross. I don't tell people the ingredients until after they've tasted them and raved about how good they are.

Turnip green soup





Turnip Green Soup





Ingredients





8 oz. chopped, frozen turnip greens


1 can great northern beans


1 pkg. Knorr vegetable soup mix


1 tsp. Tabasco


1 tbs. sugar


2 cups or more water or bullion (It's better if you use chicken bullion.)


1 lb. sliced polish sausage (This is really a lot better if you use Connecuh brand sausage.)





Preparation





Mix all ingredients together. Cook 45 minutes to 1 hour (possibly longer). Serve with corn bread. You can double recipe %26amp; freeze.





Frozen buttermilk (really this is good!!)





In a big pot that you can freeze, mix 1 qt. buttermilk, 1 can sweetened condensed milk, 1 large can crushed pineapple, tsp. vanilla, 1/2 cup sugar. Stir over low heat until sugar is dissolved. Allow to cool and place in freezer. Check every now and then and stir. Continue to check and stir until it is too frozen to stir. The more you stir the better so that ice crystals don't form. This gets really hard so you'll need to take it out of the freezer and allow to soften slightly before you serve.
Fried Chicken


I use boneless breasts but you can use this with any cut chicken


3 cups flour


4 Tablespoons seasoning salt


4 Tablespoons black pepper


mix this well then in separate bowl mix


3 cups hot water


4 chicken bouillon cubes


stir until dissolved. dip chicken in water mixture then flour repeat again then fry in hot oil on medium heat for about 8 minutes on each side until golden brown {if you want it extra crispy repeat a third time.


Sugar Cream Cake


1 yellow cake mix


2 eggs


1 stick melted butter


mix well and press in bottom of glass cake pan


1 8oz bar cream cheese Softened


2 eggs


4 cups powdered sugar


mix together and spread over cake Bake at 350 for 35 to 45 minutes or until golden brown and sides of cake pulls away from pan
