Can you give me your great recipes for cooking fish?

My husband is a very picky eater, need recipes for only mild fish like tilapia or mahi-mahi, or maybe a good one for catfish. Thank you so much!Can you give me your great recipes for cooking fish?
TILAPIA WITH CHEESE SAUCE





8 Tilapia Filets


1/2 cup real mayonnaise


1/2 cup Velveeta Cheese, coarsely shredded


1 teaspoon crumbled blue cheese


1 cup potato chips, crushed


olive oil or vegetable spray


sea salt and black pepper


garlic powder, for sprinkling


paprika (optional)





Prehear oven to 400F.


Spray a small baking sheet with olive oil or vegetable non-stick spray (or line pan with parchment paper or aluminum foil before coating with a fine mist of oil for easy clean-up).





Place fish filets on pan. Sprinkle lightly with sea salt, ground black pepper, and a light dusting of garlic powder.





In a small bowl, combine mayonnaise with Velveeta and blue cheese. Spread mixture over fish. Sprinkle with potato chips and paprika.





Bake for 8-15 minutes, or until fish is no longer translucent and is flaky white.





RANCH TILAPIA





1 5 oz. tilapia fillet


1/2 cup Ranch dressing


1 cup Parmesan cheese


2 cups corn flakes


1 pinch salt


1 pinch black pepper





Preheat oven at 350 degrees.


Grind up corn flakes into crumbs. Mix Parmesan cheese, salt, pepper in with the corn flake crumbs. Baste the tilapia fillet (both sides) with Ranch dressing. Coat fish with the crumb mix evenly.





Bake for 17 mins.








BUTTERY-CRUSTED BAKED TILAPIA





4 6-oz boneless tilapia filets


6-8 Ritz crackers, crushed


1/2 teaspoon seasoned salt


1/4 teaspoon chili powder


1/4 teaspoon adobo seasoning


2 tablespoons unsalted butter, cold





Arrange fish on a lined baking sheet. In a mixing bowl, combine crushed Ritz crackers with seasoned salt, chili powder, and adobo seasoning (use clean hands to mix).


Cut butter into 6 equal pats. Place one pat a piece directly on the center of the tilapia. Cut remaining 2 pats into pea-sized pieces and mix by hand into cracker mixture. Sprinkle crumbs equally over each tilapia filet.

Fish is one of those funny ingredients. Regardless of the type of fish you cook, the main thing to remember is; Less Is Better. By that I mean the less you do to it, the better it will taste. Use milder seasonings and don't overpower the flavor of your fish.


Try this for the tilapia:


white wine, just enough to cover the bottom of your skillet


butter - 1 tablespoon


salt- to taste


pepper - to taste


garlic - 1/4 teaspoon


Melt butter in skillet. season fish with salt and pepper. Place in skillet with butter over medium heat. Carefully turn after 2 minutes. Pour wine over fish and add garlic. Place skillet with fish in 350* oven for 5 to 10 minutes, until done. Remove fish to serving platter. Pour wine from skillet over fish.





Fish is also easy to over-cook and under-cook. Fish is done when flaky. Good luck.

here is one of the recipes:





1 (1 lb) bag frozen tilapia fillets


1 (10 3/4 ounce) can cream of shrimp soup (undiluted)


40 Ritz crackers, crushed


1/2 cup margarine





Tilapia


Layer frozen fish fillets in greased casserole dish (9x9), overlapping if needed.


Spread cream of shrimp soup over fish.


(Do not add water).


Melt margarine and mix with crushed crackers.


Sprinkle cracker mixture over casserole.


Bake uncovered at 350° for about 45 minutes.


Note: Sometimes I sprinkle old bay seasoning on the cream of shrimp soup before adding the crackers.


Also I add a dash or two of hot sauce to the melted butter before adding to the cracker crumbs.
try a sweet and sour, you only need are carrot onion garlic pour black peper venigar soysouce and sugar, all you have to do is fried a fish and make a souce,
catfish recipe- * 3/4 cup finely crushed saltines


* 1 teaspoon seasoned salt


* 1/2 teaspoon celery salt


* 1/2 teaspoon garlic salt


* 4 (8 ounce) fillets catfish


* 1/3 cup butter or margarine, melted


DIRECTIONS





1. In a shallow dish, combine the first four ingredients. Pat fillets dry; dip in butter, then coat with crumb mixture.


2. Coat grill rack with nonstick cooking spray before starting grill. Grill fillets, covered, over medium-hot heat for 10 minutes or until fish flakes easily with a fork, carefully turning once.
I have many great fish recipes, but I'll narrow it down to two of my favorites that will do well with mild fish.





INDONESIAN-STYLE GRILLED FISH





6 oz. (1/2 can) beer


1/2 cup sweet %26amp; sour sauce


1/2 cup soy sauce


3 Tbl. sugar


1-1/2 Tbl. oil


2 tsp. minced garlic


1 tsp. ground ginger


3 green onions, sliced


2 lbs. fish fillets





Blend all ingredients except onions %26amp; fish. Place fish in shallow baking dish; pour marinade over. Cover and refrigerate at least one hour. Remove fish and place on sheet of heavy-duty foil cut 2 inches larger than fish all around; bend edges up to make lip around fish. Sprinkle with onions and place on hot grill, but not directly over coals. Pour marinade over fish, cover grill, open vents. Grill 20-30 minutes, until fish is opaque and flakes easily with fork.








EASY FISH %26amp; BROCCOLI SKILLET





1 10-oz. pkg. frozen chopped broccoli


1 standard can cream of mushroom soup


1/4 cup white wine


1 tsp. lemon juice


1 pound mild fish fillets


2 Tbl. chopped pimientos


1/2 tsp. salt


Dash pepper





Rinse frozen broccoli to separate; drain. Mix soup, wine and lemon juice in 10-inch skillet. Heat to boiling, stirring constantly. Add fish, broccoli, pimientos, salt %26amp; pepper. Cover and simmer until fish flakes easily with fork, about 15 minutes. Serve over chow mein noodles, if desired.

Make a foil packet and put the fish in with some garlic, onions, butter and put in a 350 degree oven for 20 minutes, it will be great!
For Mahi Mahi, all you need is sliced Lemon, Black Pepper freshly cracked, and a knob of BUTTER not marg. place in foil parcel in oven depending on fan forced or not about 200 for 25-30mins.. BEAUTIFUL........................
