INDIAN BUTTER CHICKEN





2-3 lbs. chicken breast, 1'; cubes


1 1/2 tablespoons freshly squeezed lemon juice


1 1/2 cups plain yogurt


2 tablespoons butter


2 tablespoons chili powder


2 tablespoons garlic paste


2 tablespoons lemon juice


2 tablespoons olive oil


2 tablespoons ginger garlic paste


1 1/2 tablespoons garam masala


1 tablespoon ginger paste


1 tablespoon chopped garlic


1 tablespoon butter


1 tablespoon green chile pepper, chopped


2 cups tomato puree


salt to taste


1 cup water


1 tablespoon honey


1/2 teaspoon dry fenugreek leaves


1 cup heavy cream





Marinate chicken in a glass dish with lemon juice, 1 tablespoon chili powder and 1/2 teaspoon salt. Cover tightly with plastic wrap and marinate in refrigerator for about an hour. Pour off excess liquid from yogurt if any exists. Combine with 2 tablespoons garlic paste, 1/2 tablespoon garam masala, chili powder, salt, butter, ginger paste, olive oil and lemon juice.


Combine yogurt mixture with chicken and marinade and return to refrigerator for another few hours. Preheat oven to 400F degrees.





Skewer the chicken pieces. Place skewers in a baking dish in preheated oven for 20 minutes. Chicken will be nearly cooked through.





To prepare the sauce, in a saucepan melt the butter and stir in 1 tablespoon garam masala. When the spice begins to sputter, stir in green chile peppers, and ginger. Saute 5 minutes, stirring in the garlic paste near the end (don't allow it to turn brown). Stir in tomato sauce, 1 tablespoon chili powder, salt and water. Bring up to a boil, then reduce heat to a simmer. Stir in the fenugreek and honey.





Put the chicken into the saucepan. Cooking over medium heat for another 5 minutes, or until chicken is tender and done. Pour in the fresh cream at the last minute and remove from heat.





Taste and adjust seasoning.








KHEER (INDIAN RICE PUDDING)





This is a dessert that is made in every Indian home and there are many variations. I have discovered one that works well.





1 c. rice


1 c. water


1 c. sugar


3 tbsp. almonds, unsalted, finely chopped


3 tbsp. golden raisins


4 c. whole milk


3 tbsp. butter


3 whole cardamon pods


2 tbsp. rose water





Cook the rice in 2 cups of milk and 1 cup of water, add 1 tablespoon butter, sugar and whole cardamon. Once the rice is done, remove and discard the cardamon pod.


In small portions, blend the rice in a blender using the rest of the milk. Add more milk if the mixture is too thick. Pour into a serving bowl.





Heat 2 tablespoons of butter in a small pan. Add the almonds to the butter and stir. Now add the raisins.





Remove and place on paper towels, so that the excess butter is absorbed. Garnish the rice pudding with the almonds and raisins. Sprinkle with rose water.

Tandoori Chicken

Ingredients


10 pieces of chicken (drumsticks and/or breast with skin removed)


1 cup plain yoghurt





Spices:


1 tablespoon melted butter


1 tablespoon lemon juice


1 tablespoon red chilli powder (adjust according to preference)


1 tablespoon coriander powder


1 tablespoon garlic paste


1 tablespoon ginger paste


1 tablespoon cumin powder


陆 tablespoon mustard


陆 tablespoon Garam Masala powder





Optional Spices:


few pods of cardamom


pinch of saffron





Salt to taste





Note: You can also buy readymade Tandoori Chicken Spice mixture or paste in any South Asian store or ethnic sections of big grocery store.








Preparation


1 Mix all spices with yogurt and butter to make marinating sauce.





2 Prick the chicken and apply the sauce. Cover chicken and marinate overnight inside a refrigerator (at least 4 hrs).





3 Grill the chicken in regular way. (For better result, apply melted butter to the chicken just before you grill.)





4 Cook chicken until brownish (or way you prefer)


5 Serve sliced onion (ring) and lemon wedges with the tandoori chicken. Also, serve. Lemon juice can be sprinkled on the cooked chicken to add zesty flavor.


Tandoori Chicken is also spelled as Tanduri chicken or Tandori Chicken.
