I want to replace yoghurt with kefir in cooking recipes. Has any one tried this?What happens if I replace Yoghurt with Kefir in cooking recipes?
NO! Kefir is meant to be raw, and will curdle if heated and ruin your recipe! I make homemade kefir daily, and have tried pretty much everything with it. Once it gets over about 107 degrees, it will curdle. You can make a nice ';cheese'; with it though, to spread on your baked goods like you would cream cheese. No, but they're pretty much the same thing. Don't see how it could hurt.
